Chicken Nuggets

Ingredients:
3-4 chicken breasts, ground (or approx 1 lb ground chicken)
1-2 slices bread, crumbled (I used my rotary cheese grater)
1 cup flour (I used white whole wheat)
2 eggs, beaten
1/2-3/4 cup water (or beer for a more grown-up flavor)
1-3 Tbsp cooking oil (I used olive)

1. Combine ground chicken with bread crumbs until you get a nice, shape-able consistency that won't fall apart when handled gently.

2. Take small portions of chicken mixture, shape as desired, and coat lightly in flour; set aside. Mix together remaining flour, eggs, and water or beer to make a nice batter.

3. Heat oil in a large skillet. When hot, coat chicken in batter and place in skillet. Cook a few minutes on each side until golden and cooked through.

4. Serve with your favorite dipping sauce or sweet & sour sauce.
